Lady Love: Karla Goodwin

Karla Goodwin is the talented baker behind Bluebells Cakery. We teamed up with Karla and her cakery to create the perfect Scout Cookie to celebrate the arrival of the Saben summer collection Sabenette Scouts.We hosted coffee & cookieevents in store at Lana Boutique Auckland, Coco in Wellington and Raw Nova in Christchurch. It was such a treat to work with Karla! She is hard working, passionate, stunning and a stylish star of our Lady Love feature... Did we mention she is lovely to boot? When / Where did the Bluebells dream start?  It all started when I lived in London and I became infatuated with all the gorgeous cake shops in London and around Europe.  That was about 6 years ago now, the dream had been brewing for a while :) We love your vintage style cakery, did you have help nutting out the design and décor? I grew up surrounded by vintage and antique furniture, my mother is an avid collector.  Both my parents helped me with the fit out - a lot of the furniture I bought on trade me and from second hand stores. The vintage style was easy to achieve on a limited budget. Do you have a favourite recipe? From my book it would have to be my chocolate self saucing pudding, it's so easy to make and perfect for these cold wintery nights. It reminds me of my childhood too. Favourite treat in the cakery right now?  Our cinnamon, walnut, raisin swirl buns! Chef-spiration? Baker-spiration? ie, are there any industry muses you translate your own baking style from?  I love the beautiful simplicity of Donna Hay's recipes, and the creativeness of Jamie Oliver's throw it all together dishes.  I'm also really inspired by Linda Lomelino from Call me Cupcake, I love her raw, rustic approach - her food photography is stunning. What is in the pipeline for you and the Cakery from here?  I would love to find a bigger premises so that we have more seating for our customers, we're a bit limited in our tiny shop now, so I'm on the look -out.  I'm also about to start shooting my second book :) We LOVED working with you for the launch of our Sabenette Scout summer collection with customised scout cookies to celebrate!  The cookies are the perfect partner with Nespresso coffee.  Nostalgic AND oh so delicious!! Can you share with us your scout cookie secret so other Sabenettes can make them at home?

Scout Cookie Recipe

125g unsalted butter
125g caster sugar
450g plain flour
3/4 tsp baking powder
1/2 tsp salt
125g golden syrup
1 egg
 
Combine the butter, sugar, flour, baking powder and salt in a food processor and blend until the mixture resembles bread crumbs.
Add the golden syrup and egg and blend together until the mixture combines and forms a ball.  
Wrap the ball in cling wrap and place in the refrigerator for an hour or so.
When you are ready to bake your biscuits, preheat your oven to 180 degrees (160 degrees fan bake).  Line a baking tray with baking paper.
Roll out the dough on a lightly floured surface until about 5mm thick.  Using your cookie cutter, cut out shapes of your choice and carefully lift onto the baking tray using a knife, spacing them 3cm apart.
Bake in the middle of the oven for 8-10 minutes until slightly golden.
Remove from the oven and cool on the baking tray for 10 minutes before transferring to a wire rack to cool completely.
